TRADITIONAL AND NEW TECHNOLOGIES TO PRODUCE NATURAL AND FUNCTIONAL PRODUCTS WITH FRUITS AND BERRIES GROWING IN GEORGIA

The goal of the study was to produce natural products by using the widely spread in Georgia fruit crops, based on the novel improved technology, which are safe for health and having functional designation at the same time.
The fig, mulberry, walnut, nut and grapes were used as raw material.
Safe technology to reduce high acidity of the grape concentrate is developed.
In combination with the grapes and fruits (fig and mulberry) concentrated juices were produced (50-65-75% glucose + fructose), further used as the principal raw material to make diverse natural, processed products (Churchkhela, dried fruit Chiri, dry layer Tkbili kveri), as well as additional raw material to substitute sugar.
The gained products have not only nutritional, but also dietary and preventive value.
All obtained products are evaluated in qualitative, medicinal and preventive respects.
The technical result of the study is the diversification of assortment for the natural dietary products with nutrition and functional designation.
