Abstract
Raw fruits and vegetables are important food sources for people in the world.
Recently some important foodborne outbreaks related to the consumption of raw fruits and vegetables have resulted in detailed analysis of the problem by food scientists and microbiologists around the world.
This paper reviews some of the important developments in rapid methods and automation in microbiology directly and indirectly related to testing total microbial counts and specific pathogens in fresh and fresh-cut produce using conventional as well as advanced microbiological technologies.
Important information concerning the number of microbiological tests and the dollar value of tests around the the globe, as well as Fung’s Ten Predictions into the future will be presented.
