Comparative metabolomic analysis of two tomato cultivars during fruit maturation

Abstract
Metabolomic analysis of vegetables is an emerging research area in plant biology, and should also have a wide impact on various areas of biotechnology, including industrial research and development of processed vegetables with new functionality.
To establish a basis for metabolomic analysis, we have been studying the metabolome of tomato, the most consumed vegetable worldwide, using the approach of state-of-the-art liquid chromatography-coupled mass spectrometry with bioinformatics.
Here, we compared developmental changes in the metabolomes of two tomato cultivars, ‘Micro-Tom’, used as a model tomato, and ‘KTP001’, used for processing, during the maturation period.
Principal component analysis indicated developmental differences of the metabolomes between the cultivars.
Chemical annotation indicated cultivar-specific distribution of metabolites in 14 chemical classes.
We annotated 68 flavonoids in the cultivars that showed dynamic developmental changes in the two cultivars, suggesting that 58 flavonoids existed at the mature stage in ‘Micro-Tom’ and 37 in ‘KTP001’. These results showed significant differences in overall metabolites between the cultivars.
