Abstract
Food safety risk analysis of fruits and vegetables occupies an important position in food safety management in China and also in the world.
In this paper, empirical research on food safety analysis of fruits and vegetables in China was conducted, the safety risk evaluation index system was constructed by Delphi method (expert consulting). The system includes target layer, criterion layer and indicator layer with 3 first-level indexes and 11 s-level indexes.
The weight of each index via analytic hierarchy process was determined.
Finally, the fuzzy comprehensive evaluation of six selected areas in China was carried out by the fuzzy mathematical method to verify the applicability of the index system.
This paper aimed to provide reference and theoretical support for reducing food safety risk and strengthening food safety supervision.
