Analysis of quality and aroma components of ‘Merlot’ grape from different areas in Hexi Corridor, Gansu Province, China

Abstract
In order to clarify the content characteristics of aroma substances of ‘Merlot’ grape berries in different areas of Hexi Corridor, this study analyzed the 3 years fruit quality and aroma compotents of Jiayuguan, Zhangye and Wuwei for three consecutive years.
The results showed that the soluble solids content of ‘Merlot’ grapes in different production areas was between 20.25 and 26.20%, and the soluble solids content was the highest in Wuwei area, while the total phenol and tannin content in grape fruits in Wuwei area was significantly higher than that in other regions.A total of 35 kinds of aroma substances were detected in ‘Merlot’ grapes, including nine kinds of aldehydes, six kinds of alcohols, five kinds of esters, two kinds of ketones, two kinds of phenols and 11 other compounds.
The content of fruit aroma substances was the highest in Jiayuguan area, reaching 4206.69 µg kg‑1, of which three were characteristic aroma substances, namely (E)-2-hexenal, hexanal and (E)-2-hexene-1-ol.
