Abstract
During the tomato campaign the number of samples from various field trials carried out in the Nestlé R&D Centre, Badajoz, exceeds one hundred on peak days, and a method for stabilising them prior to analysis was needed.
The method developed by University of California, Davis, (Wolcott and Merson, 1990) proved difficult to apply to large numbers of samples, and an optimisation was sought.
The method developed by University of California, Davis, (Wolcott and Merson, 1990) proved difficult to apply to large numbers of samples, and an optimisation was sought.
A system involving the inactivation of PG (polygalacturonidase) and PME (pectin methylesterase) in a domestic microwave oven, followed by rapid cooling, screening, and deaeration, is described.
The samples remain stable for 24 hours, allowing the analytical load to be distributed over a longer period of time.
