Abstract
The bound water in living tissue plays an important role in the resistance to unfavourable environmental conditions – such as frost and drought.
For studying the bound water (i.e. water state, water binding) a microwave cavity resonator measuring method was developed.
The changes of bound water in samples – taken from the xylem of vine cane – during dormant and growing seasons were examined to compare different grape varieties, different years, two growing sites and two parts of the same vineyard on a steep slope.
The following conclusions might be drawn from the experiments:
- The general level of the water binding is genetically determined.
- There is a rhythmic fluctuation of endogenous origin in water state around the general level as a status of equilibrium.
- Endogenous and external factors equally play their part in the changes of water state.
