Abstract
As a consequence of the conversion to a single open market in Europe, ISO 9000 based quality assurance systems were developed and applied to fruit production.
In our research, we have determined the attributes that influence to the quality of sour-cherry fruits, the factors most affecting fruit quality, and methods to influence these factors by the tools of quality assurance systems.
