Abstract
The role of heredity in determining the quality of vegetables is evident from the numerous known varietal differences in quality.
But the influences the environment exerts cause certain modifications.
This means that the quality attributes appearing at harvest are a result of interactions between the genotype and a mixture of environmental forces often interlocked in a complicated manner.

In this paper some examples of quality attributes and our present knowledge of the underlying genetical and environmental forces are outlined.
The future possibilities in order to comply with the requirements coming up from the fresh market and the food industry for improvements of various quality attributes are discussed.
