Abstract
Ripening as an importante quality factor, take a sigmoidale course.
Linearization of sigmoidale curves is possible by means of probit analysis.
The process of ripening is characterized with sufficient precision by obtained straight lines.

The probit equation is given for tomato and sweet pepper cultivars ripening at various conditions /storage temperature, oxygen concentration, pretreatment with carbondioxid, cold, biostimulators/. The probit analysis make possible more exactly to evaluate and prognosticate the course of ripening.
