Abstract
In this study the interaction between varieties, environment, year, harvest time and oil quality was investigated on some of the most common cultivars in Calabria.
In 1991–1993, olive samples of the variety "Carolea", "Cassanese", "Dolce di Rossano" and "Sinopolese" were collected in the most typical areas of Calabria.
On the oil extracted, using a minimill, the following parameters were determined: acidity, peroxide number, spectrophotometric constants, acidic and sterol composition, total polyphenols.
Furthermore, a sensory evaluation (panel test) was conducted.
A notable variability was found for the acidic, sterol and phenolic composition, both for the cultivars and the time of sampling.
