IMPROVED METHODS OF ANALYSIS FOR CYANIDE IN CASSAVA AND SCREENING FOR LOW CYANIDE VARIETIES IN THE PACIFIC

Abstract
The autolysis of linamarin by endogenous linamarase extracted from cassava tubers by blending at pH 6 was studied.
The autolysis of linamarin was measured for various tubers and it was found that the speed of autolysis increased with increase in linamarase activity.
An autolysis time of 24 h at pH 6 was sufficient to cause complete breakdown of linamarin, except at the very lowest linamarase activity.
No correlation was found between the total cyanide content and linamarase activity of cassava parenchyma.
Screening of 39 cultivars from Australia and Vanuatu has shown 10 cassava cultivars which contain < 2 mg HCN/100 g fresh tuber.
