Abstract
Isolation of crocins isomers has been studied in terms of extraction, focusing in the solvent variable (methanol or water) and its characterisation by two different chromatographic methods.
The use of methanol either on the extraction procedure or in the HPLC analysis produces crocins re-esterification.
Though, methanol may increase crocins extraction yield, but then it would be impossible to know the real ratio between crocins in saffron.
