Abstract
Bergamot essence often accounts for basic ingredients for scents as well as for several products in the field of perfumery, pharmacotherapeutics and confectionary.
In the epicarp of citrus fruits, besides chromoplasts, unevenly distributed at variable dephts, several utricles which contain an essential oil typical of the species are placed.
Extraction and utilization of these substances is a very ancient activity; the main extraction technique, whose principle still underlies modern technology, consists of rubbing the fruit peel with suitable abrasive surfaces.
For the bergamot-orange growing sector to re-acquire a certain level of competitiveness in the markets a complete restructuring of the entire chain of production is needed which should be particularly focused on processing operations.
This would be helpful to keep the qualitative standards of the product elevated while lowering its production costs. the technology for industrial transformation plays an important role in influencing both the essence quality and commercial aspect.
Consequently in this paper operative results of processing operations and aspects concerning industrial hygiene and work safety are taken into consideration.
