SCREENING OF GENETIC VARIABILITY FOR SOME PHENOLIC CONSTITUENTS OF GLOBE ARTICHOKE HEAD

Abstract
Phenolic phytochemicals influence the sensory qualities of vegetables and possess antioxidative, anticarcinogenic, antimicrobial, antiallergic, antimutagenic and antiinflammatory activities.
Artichoke is a potential source of antioxidant activity, even if to choose of the cultivars plays an import role in the distribution and composition of phenols.
Aiming at screening some phenolic compounds in heads of different globe artichoke genotypes, field experiment and laboratory analyses have been carried out during 2003-2004 growing season.
From 15 globe artichoke types (5 with spring production and 10 with autumnal one, shared in five clones of Violetto di Provenza and 5 clones of Violetto di Sicilia) heads have been collected at the same phenological stage, and adopting an HPLC method, two phenolic acids (Chlorogenic acid and Cynarin) and two flavonoids (Luteolin and Apigenin) content have been analysed.
Significant differences between genotypes have been observed for each studied phenol.
In particular chlorogenic acid content ranged between 8725 (VS 6/4) and 1619 mg kg-1 D.M. (VP 41). The highest cynarin amount has been reported from CB (7054 mg kg-1 d.w.), the lowest in VP 41 (207 mg kg-1 D.M.). As far as flavonoids compounds are concerned, only for 5 (VM, VP 41, VP 45, CB and B5) of the 15 studied genotypes, luteolin content has been observed but no significant differences have been reported.
Apigenin content ranged between 33 mg kg-1 D.M. (VP 41) and 10 mg kg-1 D.M. (average value from MT1, Camerys, B3, Violetto di Sicilia clone 3/10 and Camard not differentiated). The group of spring productive genotypes reported the highest cynarin amount, while the group of autumn productive genotypes collected in Sicily obtained the highest chlorogenic acid content.
Cumulating all the studied phenolic compounds, the lowest amount has been reported by the Provencial genotype with autumn harvest season.
