The juice of sweet cherries treated with brassinosteroids has enhanced phenolic compounds

Abstract
Sweet cherries (Prunus avium L.) are particularly rich in phenolic acids and flavonoids (mainly anthocyanins), both known for their strong antioxidant activity, and these compounds are responsible for the potential health benefits of cherry intake.
Anthocyanins contribute to sensory and functional characteristics of sweet cherry juice.
In this research work, trees of the ‘Sunburst’ cherry cultivar were foliar treated with 24-epibrassinolide (Bras) at 0.1 µM concentration and distilled water (control trees) at three key moments of fruit development.
Sweet cherries were harvested according to commercial criteria in terms of colour and total soluble content.
Total phenolic compounds, total anthocyanins, individual anthocyanin profile, fruit colour, weight, firmness, total soluble solids and total acidity content were analysed at harvest and 28 days at 2°C. Results showed that during 28 days of storage at 2°C the juice from Bras-treated sweet cherries had a significantly higher phenolic compounds content than untreated cherry juice at harvest and during cold storage.
In terms of colour, both hue angle colour and total anthocyanins content were improved by Bras preharvest treatment at harvest, although no significant differences were shown at 28 days of storage.
Furthermore, individual anthocyanin profile showed that cyanidin 3-O-rutinoside was the major one in this sweet cherry cultivar, followed by perlargonidin-3-O-rutinoside.
Juices from Bras-treated sweet cherries were characterized for a significantly higher content of both individual anthocyanins at harvest and after 28 days than those juices from control fruits.
Regarding organoleptic properties, total soluble solids content was significantly lower in juices from Bras-treated fruits at harvest and at 28 days at 2°C. However, total acidity was significantly higher at harvest and at 28 days of cold storage in juices made with Bras-treated sweet cherries.
Both parameters lead to a significantly lower ripening index in those cherries treated with Bras in preharvest compared to control fruits.
In conclusion, the application of brassinosteroids enhanced the phenolic compounds content of juices made with Bras-treated sweet cherries, mainly in terms of total phenolics content.
