Abstract
Colour is an important aspect of quality of vegetables.
This paper reviews colour measurements of vegetables and illustrates the features requested by Italian buyers.
Unlike with fruit, until recently, objective measures have been infrequently used in vegetables.

This paper describes results from analytic measures by means of reflectance instruments on several spinach and tomato varieties, as well as some onion, pepper, and potato varieties.
