Abstract
This paper reports on a study conducted in Germany in 1988 to test the quality of tomatoes.
Three varieties of tomatoes were taste-tested by 170 consumers to determine pair comparisons, ranking order, and a profile analysis.
Among the results, consumers indicated that the most important factors in evaluating tomatoes were a non-floury texture, juiciness, interesting taste and inner appearance.
