Abstract
Control of the calcium-related disorder bitter pit is important in the production, storage and marketing of New Zealand apple fruit.
Prediction of the risk of bitter pit, and reduction of the potential of fruit for developing the disorder are currently major research topics.
Current research is reviewed on the assessment of bitter pit risk from mineral analysis, identification of orchard factors which influence bitter pit incidence both through an effect on mineral nutrition and independently, and the ways in which such factors can be used to both assess disorder risk, and reduce its incidence.
