Abstract
Changes in the level of soluble sugars and in the activity of acid invertase, sucrose synthase (SS) and sucrose phosphate synthase (SPS) were studied in storage roots of asparagus (Asparagus officinalis L. cv.
Welcome) on sprouting.
We held the rootstocks at 250C for 10 days and examined the changes in soluble sugars and enzymes during sprouting.
The acid invertase in cell wall-bound fraction showed a higher activity than that in soluble fraction and both the acid invertases increased in activity during sprouting.
The activity of SS and SPS decreased gradually throughout the experimental period and SS showed higher activity than that of SPS. The contents in glucose, fructose and sucrose also showed changes during sprouting.
In storage roots the level of fructose was lower than that of sucrose, and glucose was found in trace amount.
The activity of both the soluble and cell wall-bound acid invertase had a negative correlation with sucrose but sucrose was positively correlated with the activity of SS and SPS supporting well the view that sucrose synthase pathway is important in asparagus storage roots during sprouting and the differences in sugar contents are associated with differences in enzyme activities.
