Abstract
In the quality assessment of horticultural products, a shift from destructive towards non destructive quality sensors can be observed.
An overview is given of the main non-destructive techniques for measuring quality attributes of horticultural produce based on acoustic, optical and olfactory techniques.
These non-destructive techniques offer the possibility to monitor quality changes of individual products over time revealing the evolution of biological variability in a batch.
To properly analyse this kind of data new stochastic modelling approaches have been introduced in the field of postharvest technology: mixed models and stochastic kinetic models.
The data obtained using non-destructive techniques can thus be used to calibrate a new generation of simulation models that can be used to analyse and predict the evolution of quality components of the produce under variable storage and handling conditions.
Such models can be used as the basis for future innovative supply chain management.
