Abstract
Investigations into the influence of nitrogen fertilization on nitrate contents of different vegetables, which has become actual due to the diet regulations having come into force in the Federal Republic of Germany in 1979, were at first carried out with cauliflower (Pimpini et al., 1970, 1971), with kohlrabi (Venter et al., 1979), and with lettuce (Venter, 1979). Then investigations with carrots followed, since this crop is of great importance for baby food and dietetic food.
