Abstract
‘Sixth Industrialization’ activities have arisen in Japan to promote domestic agriculture by integrating primary, secondary, and tertiary industries to achieve greater value added in products and services.
Persimmon fruit are known from ancient times as an effective natural medicine to alleviate hangover after excessive drinking of alcoholic beverages.
Research in this area has lead to the successful development and marketing of a drink to alleviate hangover symptoms made from ‘Saijo’ persimmon.
We attempted to stabilize the kaki-tannin concentration in each lot of ‘Saijo’ drink by determining its concentration using the Reflectoquant ascorbic acid test strips and consequently developing a simple stabilization method.
