Analysis of the formation and development of fruit and vegetable processing infrastructure in Ukraine

Abstract
Ukraine is one of the leading food producers in the world, even in conditions of technical backwardness of the sector, underdeveloped infrastructure, insufficient financing and an imperfect institutional environment remain the limiting factors for the development of the fruit and vegetable market.
Monitoring of the market of fruit and vegetables and processed products in Ukraine shows that the largest shares in its structure are occupied by fresh vegetables – 30.9% and fresh fruits – 24.7%, while segments of derived products: juices, pickles, salads, sauces, jams each represent 2 to 5% of the total market volume.
Cultivation of fruit and vegetables in Ukraine is carried out mainly by small agricultural enterprises and families, as large agricultural enterprises prefer cereal, oil and legume crops.
According to the Ministry of Agrarian Policy of Ukraine, vegetable stocks amount to almost 29 million tons; their deficiency depends on storage conditions, because currently there are not at least 150-170 warehouses sufficient for proper storage of products grown by farmers.
In Ukraine there is no diversified offer of high quality, economical and safe for human health of fresh-cut products since such products are new on the shelves of Ukrainian supermarkets.
One of the first and currently the most visible brand is “Vita Verde”. Basically, fresh-cut producers have to rely on so-called minimarkets, specialized kitchen shops, supermarkets and hypermarkets.
A peculiarity is that supermarkets and hypermarkets have their own full-fledged laboratories for the production of very expensive fresh-cut salads.
It is important to establish systematic cooperation regarding the support of the processing industry with international financial organizations and the EU. In the agenda of the strategic partnership of Ukraine with the EU, within the framework of the Memorandum on the strategic partnership in the raw materials sector, it is necessary to include, among other things, development projects for the processing of fruit and vegetable raw materials, which will allow to attract financial, expert and technological support from the EU.
