Bioactive content enhancement in tomato by-products through UV-B abiotic stresses

Abstract
The tomato industry reaches an annual production of more than 189.133 Mt worldwide and among 50 and 75 Mt are lost throughout the tomato production chain.
Tomato by-products are a good source of antioxidant compounds, as phenolics and carotenoids, therefore they can be used as potential preservative extracts into new products.
Since abiotic stresses can be applied to enhance the synthesis of these compounds in fresh tissues, the objective of the present work was to study the use of UV-B light as elicitor of the phytochemical synthesis in tomato by-products obtained during the grated tomato production.
Fresh peels and seeds obtained as tomato by-products were treated under 0, 5, and 10 kJ m‑2 (CTRL, UVB5, and UVB10). Packed by-products (85±5 g) were stored at 15°C and the biosynthesis of antioxidant compounds was monitored after 4, 24, and 36 h.
Analysis of total antioxidant capacity (TAC), total phenolic content (TPC), and lycopene content were assessed in triplicate from freeze-dried samples.
Results showed that phenolic biosynthesis was positively affected by UV-B abiotic stresses, as well as the TAC, that immediately increased after UV-B treatment by ~2.5-fold for UVB5 and UVB10 compared to CTRL. In fact, TAC values were maintained high during all sampling times, being ~100 and ~150% higher for UVB5 and UVB10, respectively, after 24 and 36 h storage, regarding CTRL. Lycopene content was highly increased after UV-B treatment (~32% for UVB5 and UVB10), and this effect was maintained through the time by both UV-B treatments by an increase of ~20%. These results showed that UV-B is a good tool to enhance the biosynthesis of phytochemicals in fruit and vegetables by-products before its extraction to be applied as preservatives into new foods.
