Abstract
Underutilized crops play a vital role in supporting biodiversity, cultural heritage, nutritional security, and education – yet their potential is often overlooked.
Case studies from diverse regions highlight both the crops themselves and the passionate researchers and advocates working to bring them to the forefront.
Waterman presents her research on moringa, a nutrient-dense tree with multiple applications in health and agriculture.
She highlights how this led to connections with several other researchers working with underutilized crops, including Rafael Peron Castro in Brazil, who focuses on the macaw palm for biodiesel; Cultural Roots Nursery, which cultivates and sells Southeast Asian vegetables; and the Ujamaa Farmers Collective, which advocates for opportunities among marginalized farmers.
