Abstract
To characterize the quality evolution of tomatoes during shelf life in relation to specific treatments (for instance storage temperature) the following non-destructive quality parameters were measured on each fruit: the weight in g, the resonance frequency in Hz and the percentage of green, pink and red on the tomato surface.
The stiffness factor in Hz2 g2/3 is calculated out of the resonance frequency.
The color distribution information is extracted out of digitized video images.
The effects of storage temperature on these variables are investigated both with classical univariate techniques (ANOVA) and multivariate analysis.
The multivariate behavior of this set of quality descriptors during shelf life, is analyzed by means of Principal Factor Analysis biplots.
Additionally, the effects of storage temperature on these descriptors are investigated with Canonical Correlation Analysis biplots.
