Abstract
Apples of twelve varieties were subjected to mechanical tests at harvest maturity and after storage.
The mechanical properties related to fruit firmness were determined using different tests; a compression test of a cylindrical specimen of flesh, a tension test of the skin, a puncture test of the apple flesh and a bending test of a flesh block.
The mechanical resistance of apple fruit generally decreased with storage time and maturity.
