Abstract
Sweet cherries (Prunus avium), which include several cultivars, significantly differ in appearance as well as chemical composition.
In recent years, the research focused on the polyphenols, which are naturally occurring compounds in all fruit species known for their health promoting properties.
We have studied selected hydroxycinnamic acids (chlorogenic acid, neochlorogenic acid) in different cultivars of sweet cherries (whole fruit). The analyses were performed using high performance liquid chromatography with a diode-array detector.
The analysis was performed on the same cultivars in years 2004 and 2005. Differences in phenolic content were determined among cultivars and between years.
