AMPELOGRAPHIC CHARACTERISTICS AND WINE COMPOSITION OF THREE GRAPEVINES VARIETIES WITH BLACK GRAPES

Abstract
In this research, the characteristics of three black winegrapes (Malvasia nera, Negro amaro and Primitivo) were analysed, because they constitute the base of many D.O.C. wines, obtained in the provinces of Brindisi, Lecce and Taranto, (Southern Italy). The grapes of three vines were picked in September 2000, in the experimental field of Valenzano (BA). The experimental design was three randomized bloks with plots of four vinestoks each.
The following characteristics were measured: ampelographic characteristics of cluster and berry, phenolic composition of grape-seed extracts and of skin extracts, anthocyans composition of skin, must and wine composition after eight months of elaboration.
The parameters were determined according to official analysis methods of Italian Ministry of Agriculture.
Statistical differences were observed in must and wine composition: total polyphenols were higher in Malvasia nera (921.3 mg/L), total anthocyanins were lower in Negro amaro (155.5 mg/L), the organic acids were respectively in mean: 2.96 g/L per tartaric acid, 0.60 g/L per malic acid and 0.48 g/L per lactic acid, Primitivo wine was characterized by low content in pro-anthocyanidins.
