Abstract
The proximate composition of different cultivars, different developing stages and different organs of Chinese jujube by phenol-sulfuric acid method.
Polysaccharides of Chinese jujube (Ziziphus jujuba Mill.) was determined from fruits.
Investigations showed that the polysaccharides contents of 105 cultivars ranged from 0.77 to 3.19%. The cultivars which have the highest contents of polysaccharide were ‘Jiuyueqing’O and ‘Heiyezao’, and ‘Linyilizao’ and ‘Mayazao’ have the lowest contents.
Of different organs, red fruits had the highest polysaccharide content.
During fruit development, the highest content of polysaccharides occured at mature stage.
Chinese jujube fruits is a good source of polysaccharides.
