Analysis of volatile aroma compounds from mango leaves

Abstract
The volatile aroma compounds in mango leaves were analyzed qualitatively and quantitatively using the method of HS-SPME and GC-MS. 31 compounds were found in leaves of ‘Irwin’ mango, largely consisted of terpenes and esters, the total concentration was 6174.5 µg kg‑1. Of all aroma compounds identified, the concentration of (Z)-3-hexen-1-ol acetate was the highest at a level of 1857.0 µg kg‑1, followed by (Z)-β-ocimene with a concentration of 927.9 µg kg‑1, germacrene D with a concentration of 915.9 µg kg‑1 and β-elemen with a concentration of 827.5 µg kg‑1.
