Abstract
Protein composition of fruits kernels of 7 walnut cultivars of Nikita Botanical Gardens selection grown in soil and climatic conditions of the foothill Crimea (‘Alminsky’, ‘Arkad’, ‘Burlyuk’, ‘Dolinny’, ‘Podarok Valentiny’, ‘Karlik 3’, ‘Karlik 5’) were studied and the fractional structure was determined by polyacrylamide gel electrophoresis (PAGE) and 2-mercaptoethanol treatment.
The observed change in the molecular weight profile can be explained by breaking thio-diester bonds in oligomeric protein complexes formation.
The obtained results were similar for all walnut cultivars, studied which indicates the possible functionality of these proteins only in a form of complexes in their native state.
