Combined effect of modified atmosphere packaging and potassium permanganate-based ethylene scavengers on apricot bioactive compounds

Abstract
Apricot is a high ethylene (C2H4) sensitive climacteric fruit.
To delay its C2H4-associated ripening processes, the synergistic effect of modified atmosphere packaging (MAP) and C2H4 scavengers, based on potassium permanganate (KMnO4), has been suggested.
However, because KMnO4 is a strong oxidizing agent, the effect of its C2H4 removing capacity on apricot antioxidant properties should be elucidated.
For that purpose, a commercial C2H4 scavenger (COM) and a novel one comprising sepiolite (SK), both containing KMnO4 as the active agent, were used in this study.
Apricots were harvested at the deep-orange/red ripening stage, with some pale-yellow color remaining on the fruit skin.
Precooled apricots were stored under MAP (8 kPa CO2 + 15 kPa O2) with an C2H4 scavenger.
As control (CTRL) MAP without scavengers was used.
Total phenolics content (TPC) and total antioxidant capacity (TAC) of fruit were monitored during storage at 2°C. Generally, TPC and TAC showed changes during storage, with a slight tendency to increase.
The initial TPC was 500.63 mg GAE kg‑1 FW, and its evolution was not greatly influenced by the evaluated scavengers.
The initial ferric reducing antioxidant power (FRAP) and ABTS activities were 132.17 and 476.39 mg Trolox equivalents kg‑1 FW, respectively.
Regarding CTRL, the TAC was affected by the SK scavenger on specific days, while the COM scavenger did not show any significant effect throughout storage.
The latter suggests that KMnO4 did not interfere with the TAC since the two scavenging materials used comprise such chemical reagent.
Therefore, apricot may be protected from the C2H4 detrimental effects by using KMnO4-based C2H4 scavengers, without compromising quality and the total content of its main bioactive compounds for at least 29 days at 2°C.
