Abstract
Due to their consumption over the world, plums (Prunus domestica L.) are considered popular fruits and represent a rich source of natural antioxidants such as polyphenols and anthocyanins.
During storage in controlled atmosphere conditions, the antioxidants concentrations in plums can decrease or acumulate, these variations depending on the genotype and also on the postharvest conditions.
The objective of this paper is to compare organic with conventional plums, taking in consideration the variation in quality parameters (pH, total titrable acidity, total soluble solids, dry matter and firmness), physiological parameters (respiratory intensity, transpiration rate) and bioactive compounds (total phenolic content and antioxidant activity) during storage period.
Plums, both organic and conventional, were harvested in July 2019, divided equally and stored in different conditions, i.e., normal atmosphere at 1°C and 95% relative humidity (RH) and in two controlled atmosphere conditions at 1°C, 95% RH, 3% and 1.5% O2, respectively, 5 and 10% CO2. Plum samples were analyzed after 3, 5, 7, and 9 weeks of storage.
The storage period for organic batch of plums was shorter with approximately 2 weeks than the batch of conventionally grown ones.
The total phenolic content and antioxidant activity decreases for both organic and conventionally grown plums stored in 5 and 10% CO2, respectively.
Increases of the total phenolic content and antioxidant activity were observed in normal atmosphere conditions for both analyzed samples due to ripening during storage.
In the present work, conventional Centenar plums were better preserved than organic ones, but further studies and trials are required.
