Abstract
The frequent disagreement on colorimetric problems among firms that commercialize tomato products spring for the most part from the inconsistency of instrumental measurements and instrument calibrations.
Since there no rule that regulates operating conditions or defines the instruments compatible one with another, there is the risk of speaking different languages (measurements) while using the same alphabet (instruments). In this paper, two of the instruments most widely used in tomato colorimetry are compared : the Hunter-Lab and the Gardner colorimeters.
All colorimetric parameters (L, aL, bL and Tp) are statistically analysed and the differences found between the two instruments are discussed.
