Abstract
Discriminant analysis techniques based on the visible-near infrared (VNIR) spectra of persimmon fruits were used to differentiate between fruits with different maturity characteristics.
Variations in maturity were induced by applying phytohormone (nil, GA3, ethephon and CPPU) treatments to ‘Fuyu’ and ‘Matsumoto wase Fuyu’ trees mid-season and sampling fruits at 16, 19 and 23 weeks from full bloom.

Diffuse body reflectance VNIR spectra (540–1000 mm) were collected from intact fruit.
Spectra of control fruits for each cultivar were used to train a discriminating algorithm.
The other treatment, fruits were then compared and the resulting Mahalanobis distances were used to indicate the difference between treated fruits and the control group.
