Abstract
Sliced ‘Bokyojosaeng’ strawberries were packaged with five different types of polymeric films and stored at 5°C for 2 weeks.
Oxygen diffusion rate of antifogging-oriented polypropylene (AF-OPP) and chitosan coating film were below 3000 cc/m2/day, and that of low-density polyethylene film (LDPE) was higher than other films.
Carbon dioxide concentration within chitosan film was higher than within the AF-OPP film with low gas permeability.
The berries stored in chitosan film maintained higher values of hardness than those in other films.
After 6 days, sliced strawberries markedly showed symptoms of softening.
Chitosan film was slightly effective in reducing development of skin and flesh color.
Most of the accumulated volatile compounds were ethanol.
After 6 days of storage, decay incidence and off-flavor were detected in the sealed films indicating that 6 days was the maximum time of marketability.
