Abstract
Looking at simple statistical data, we wonder about the large quantities of tomatoes which enter the processing plants everyday all over Europe.

Italy alone, accounts for 55% of the entire production of tomatoes historically, Italy is considered to be the country where the industrial use of tomatoes started.
It goes back to the time, when large neapolitan families canned tomatoes during the summertime.
When the desired concentration was achieved, tomatoes were stored in bottles for further conservation.
