Abstract
The tomato processing industry has made tremendous advances in the past 30 years.
Increases in field production have corresponded with increases in processing capacities.
Madernization and enlargement of processing facilities have kept the industry constantly growing to meet the demands of the consumer.
New technologies such as aseptic processing and packaging and bulk distribution continue to play an important role in the future development of the tomato industry.
Increasing container and energy costs cause the processor to search for alternatives and place new demands on both producers and processors.
This paper reports on recent and future developments in the tomato processing industry and their impact on future tomato production.
