Abstract
Storage of smashed tomatoes to be processed during hours without supply of fresh products will give a better output of a plant.
The study of the quality of the concentrate made out of this stored smashed products indicates that the consistence of the final product increased (fig. 2). The amount of galacturonic acid decreased what is also an advantage.

The higher consistence is in relation with the concentration of extractible pectincs.
