Abstract
Red beet was investigated for three years about the influence of sowing date (3 variants) and density (5 variants) on the quantity of yield and its quality for processing before and after storage.

The highest red beet yield was attained when it was sown in April and the lowest one when it was sown in June.
If sown in double rows (40 to 60 + 20 cm) the tuber yield was higher and more suitable for processing than in single rows (20 cm).

After 150 days of storage the loss on weight in cellar was 23 to 27 % and in earth-clump it was only 3 to 5 %.

Among various sowing dates the differences in quality of the marinated product were much lower before storage than after it.
The stored yield sown in April was of a worse quality than that of later sowing dates.
During the storage the content of coloured matter was reduced by 50 – 55 %.
