Abstract
Extremadura is one of the main productors both nationally and worldwide in processed tomato products such as concentrated products, sauces, canned tomatoes (whole tomato, dices and triturated), dehydrated, etc.
Thus, the innovation and search for improving the quality of raw material (tomato cultivars) respond not only to the growing demand of the tomato products but also to make economically more viable the tomato processing industry that is a reference throught of food industrial sector in Extremadura.
The aim of the present work has been to study different cultivars of industrial tomatoes at different maturity stages to identify the best moment in which soluble solid/acidity relation may lead a better final quality product in addition to more profitable at industrial scale.
For that were evaluated the most important physico-chemical parameters from industrial point of view such as pH, acidity, quantity of total sugars, soluble solids and sugars and organic acids accumulation, of a total of 6 cultivars classified in low Brix (3) and high Brix (3) in TOMAVIT project.
The results showed that all cultivars had high levels of soluble solids and sugars, especially in more advanced maturity stages (red and overripe). N6416 was the cultivar that presented the better results in this parameter.
The average content in total acidity of all the cultivars was high showing a direct relationship with the pH, where lower results than usual were obtained in tomatoes for industry.
These results allowed to identify the red maturity stage as the better in its industrial use, however in Malva, H1015 and S8840 cultivars was observed how they continued accumulating sugars past this ripening stage until the overripe stage, although affecting other parameters such as pH (increasing it).
