Abstract
Varieties ‘Camuezo’ and ‘Amarillo’ were used in the test, both very commercial in the region of Boyacá, Colombia and collected in Nuevo Colón (2 440 m above sea level, average yearly temperature 14°C, 900 mm rainfall yearly) on feb 20, 1990 in the final preclimateric phase.
Packing media used were polyurethane and cardboard trays hermetically sealed with polyethylene sheeting for six fruits each at a 4°C fridge temperature and at room temperature (average 19°C).

At the low 4°C temperatures ‘Camuezo’ kept well 41 days and ‘Amarillo’ 37 in the polyurethane trays and 2 days less in the cardboard trays.

Transpiration rates increased at room environment until the 8th day and in the fridge until the 15th day.
Fruit moisture decreased from 66 to 48% at room environment (15 days) and to 62% and 58% (35 days) in the fridge.

The Brix degrees at room environment fell from 14.7 (‘Camuezo’) and 12.7 (‘Amarillo’) almost by 50% in 8 days.
In the fridge there was no loss, but rather an increase of sugars starting at day 15. The fastest acidity decrease was observed in the ‘Amarillo’ variety.

While P increased in both storing conditions, C showed variable behavoir.
