Abstract
Yellow passionfruit (Passiflora edulis f.flavicarpa) showed changes in protein, pectin and soluble solids during development.
Internal and external diameter were related to mesocarp fresh weight in an exponential trend.
Anatomical observations of fruit surface showed high amount of trichomas and stomas.
A highly developed schlerenchyma was observed at all development stages.
Scanning microscope showed changes in epicuticular wax during fruit development.
Fruits treated by freezing and thawing showed a better performance to remove dermal system without traditional maceration.
High stomas and trichomas proportions together with a non-complex epicuticular wax could be factors that contribute on high water losses occurring after harvest in passionfruits.
Results provided information about morphological changes associated to fruit senescence.
