INFLUENCE OF CALCIUM AND OXYGEN LEVELS ON SOFT SCALD OF STORED ABBE FETEL PEARS

Abstract
The effects of postharvest calcium dips and of O2 content during long term storage in CA on soft scald of Abbé Fétel pears were examined in various experiments.
The fruits were post harvest dipped in 1.0, 2.0, 3.0 and 4.5% CaCl2 and stored at 0 °C with 2.5% O2 and 4% CO2. The influence of 2, 4 and 6% O2 with 1% CO2 and of delayed CA establishment on soft scald was also evaluated.
In untreated pears the highest calcium content was detected in the skin and the lowest under the skin between 1 and 5 mm, while on whole fruits it ranged from 108 µg per g (untreated) to 138 µg per g (4.5% calcium dipped). After 210 days of storage, 53% of untreated fruits and only 4.6% of those treated with 4.5% CaCl2 were affected by soft scald.
Pears dipped in 1, 2 and 3% CaCl2 presented intermediate values.
An inverse relationship was found among O2 concentrations and soft scald susceptibility.
By increasing O2 to 6% the incidence of soft scald was reduced by 68%. The delayed establishment of CA did not influence the disorder whereas air storage prevented its appearance.
Analysis of coniugated triene (CT) content of the skin failed to reveal any relationship between disorder incidence and CT.
