DETERMINATION OF ANTHOCYANIN BIOSYNTHESIS IN THE CIRAD PINEAPPLE HYBRID ‘FLHORAN 41’

Abstract
Flhoran 41 is a red pineapple hybrid developed by CIRAD. Shell anthocyanins appear to be synthesized relatively early during the green stage, before ripening.
Green fruits develop a deep reddish colour after 3 to 4 weeks in cold storage at 13°C but it is not a de novo synthesis.
Anthocyanins are synthesized in larger quantity in fruits grown at high altitude (350 m) than those grown at sea level.
With multilocal experimentation we could determine that a minimum sum of temperatures of 300 hours under 25°C between forcing and harvest is required to get most of the fruits showing the nice deep red color.
HPLC analysis showed that most of these anthocyanins are cyanidin derivatives.
