ANALYSIS OF NUT QUALITY CHARACTERISTICS OF DIFFERENT EARLY-FRUITING WALNUT CULTIVARS FROM SHANXI PROVINCE

Abstract
This research characterized the appearance quality and interior quality of the four most widely cultivated cultivars in Shanxi province.
The results show that: 1) the appearance characters of the four walnut cultivars all reach the “super” standard for China, and are thus excellent cultivars, with the kernel percent of ‘Liaoning 1’ being the best; 2) there are obvious differences in fat and protein contents among the four cultivars.
The fat content of ‘Zhonglin 1’ was the highest, reaching 68.8%, the lowest was ‘Zha 343’, at only 64.3%, the protein content of ‘Bokexiang’ was the highest, reaching 14.37%, the lowest was ‘Zhonglin 1’, at only 10.53%. The contents of nutritional elements were in the sequence from high to low of P>K>Ca>Mg>Zn; 3) there was significant correlation among interior quality measures.
There was significant correlation between single fruit weight and kernel weight.
But there were no significant correlations between the appearance characters and interior quality characters.
