Postharvest tuber greening disorder susceptibility of two potato cultivars commonly grown in South Africa

Abstract
Potato tuber greening is a major postharvest disorder affecting tuber quality and consumer acceptability.
The green colour on potato tuber is caused by the change of amyloplasts to chloroplasts during light exposure.
However, there are limited reports on whether these plastids change and consequently green colour appearance differ among cultivars.
Therefore, the susceptibility of two major potato tubers (‘Mondial’ and ‘Sifra’) in South Africa, to greening disorder during postharvest light exposure was investigated in the present study.
Tubers were obtained from a commercial market.
Thereafter, irradiated with fluorescent light for 8-day storage period.
The results indicated that potato tuber susceptibility to postharvest greening differ with cultivars and greening increases with duration of light exposure (0-8 days). For instance, during the 8th day of light exposure ‘Mondial’ was significantly greener (p<0.05) than ‘Sifra’ as compared to the first day of light exposure.
Moreover, ‘Sifra’ had significantly (p<0.05) more colour intensity compared to ‘Mondial’. However, from day 0-8 ‘Sifra’ showed significantly (p<0.05) higher peel lightness compared to ‘Mondial’. The findings indicate that cultivar factors should be considered whenever postharvest management strategies are developed for controlling greening disorder.
