Abstract
In order to study and control post-harvest physiology of Apricot fruit, to provide good fruits to consumers, we studied some physiological and physicochemical criteria of 2 varieties at different ripening stages, and the influence of CO2 postharvest treatments.
CO2 applications as pretreatment just after picking, modify certain metabolisms and allow to have a longer shelf-life.
The stage of ripeness is very important towards the behaviour and efficiency of the treatment.
Fungicidal action of CO2 has been verify and seemed more efficient in CO2 treatments than in controlled atmospheres (CA) ones.
